The TALOTOKI CAFÉ LA GRANJA


TALO is a basque gastronomic speciality, a kind of flat cake made of corn flour, water and salt; it has for centuries constituted the nutritional base of our ancestors, thanks to its energetic value (rich in hydrates and low in fat and proteins).

Progrssively displaced of our diet by the imposition of the great wheat industries, nowadays it is seldom we can taste a good TALO, and this just a few times a year in popular agro alimentary fairgrounds.

In order to contribute to the popularization of the genuine basque TALO, making it easy for “people at home” to taste it with more assiduity and also making it known to our visitors, the 5th of May, 2008, the historical CAFÉ LA GRANJA in Bilbao inaugurated a permanent TALOTOKI (a TALO stall), for the daily elaboration and selling of this product, attended by Aitor Aurrekoetxea.

This TALOTOKI CAFÉ LA GRANJA is running working days (from Monday to Saturday) from six in the afternoon, offering the traditional “talo with txorizo” for only 4 euros, plus a special “talotxiki”, a new format in the fashion of the old substantial “pintxos” in Bilbao, for 2 euros.

*Aitor Aurrekoetxea is a young farmer who grows, in his farms in Mungia and Gamiz-Fika, the typical corn of our region; he obtains the corn flour grinding it in genuine stone mills (dated 1843), and he even elaborates the “txorizo” with the “txorizero” peppers that he also grows in his exploitations, thus guaranteeing the quality of the product from its origin to its final consumption.
